Sourcing
Two farms. Both on first-name terms.
We buy the whole lot or none of it, which means the price is agreed before harvest and the farmer is not gambling on us. It also means we run out, and we would rather run out.
The roast
Light enough to taste the fruit
Anything darker is a decision to hide the bean. We would rather sell you something that tastes of where it grew, even when that is less forgiving in the cup.
Freshness
Bags are dated, not stamped
The date on the bag is the day it left the drum, not a best-before eighteen months out. Coffee is at its best from four days to four weeks, and we would rather you knew that.
Brewing
A recipe on every bag
Dose, grind, water temperature and time, worked out on the kit most people actually own. Follow it once, then change one thing at a time until it tastes like yours.
The shop
Open at seven, closed on Mondays
The roaster runs Tuesday and Thursday mornings, so those are the days the room smells like the reason we do this. There is a bench, and nobody will rush you off it.
Subscribe, or just try a bag
Subscriptions ship the morning after roasting and pause whenever you like. If you are not sure yet, one bag is a smaller commitment than a conversation.
