How it is madeThe mash
Floor malted, milled coarse, and mashed in an open tun so you can smell the wash from the road. Nothing is rushed to hit a delivery date.
The still
A slow run keeps the heavier oils in the spirit, which is what gives it weight later. We cut early and lose some volume for it.
The wood
The first fill gives vanilla and coconut, the second gives dried fruit and a darker colour. We taste every cask before we decide it is finished.
Bottling
Each bottle is numbered by hand and carries the cask it came from. Add water at the table if you want it softer, rather than us doing it for you.
Visit
Come and taste what is in the tun. If a cask is ready you can fill a bottle from it and write your own label.
